Hand harvested at 12.5 Baume on the 24th of February.

A blend of de-stemmed and carbonic maceration treatments. Wild Yeast fermentation. Pressed to old 300L French Oak Barriques for 4 months elevage.

12.5% Alc/Vol. Approx 7.4 standard drinks.

Bottled unfined and unfiltered with minimal sulphur.
